Boca Spicy Chik’n patty with Daiya cheddar. Just so-so.

Breyer’s non-dairy Peanut butter Swirl ice cream. Pretty good.

This ooey gooey mess is Light Life veggie turkey slices, Daiya cheddar, Vegenaise and spinach on rye pumpernickel bread. The veggie slices were just ok.

Miyoko’s Chao

Our first time trying Miyoko’s Chao vegan cheese. This was the Aged English Smoked Farmhouse. I though it was really good but it was too smoky for Nova.

New Flatware

I decided meal time would be more fun with a variety of mismatched flatware/silverware. So off to the thrift stores I rode in search of just that. First was forks and then on subsequent trips I’ve gotten spoons and knives. All in varying styles and patterns.

Dirty Rice

Ingredients
1 package Beyond Meat Beyond Beef crumbles
2 cups uncooked brown rice
1 small onion chopped
1 bell pepper chopped (I used half a green and half of a red)
3-4 celery stalks chopped
1 jalapeno sliced
2 cloves minced garlic

Directions
Cook rice however you normally would
Brown the meat crumbles
Add veggies and continue cooking until veggies soften up
Add in cooked rice
Salt & Pepper to taste

Plant-based mac and cheese with broccoli, spinach, cabbage and Fieldroast hot dogs.

Jambalaya for Fat Tuesday with Tofurkey.

Fish-like tacos. Tofu coated with oil and crushed dried seaweed, pan fried.

Fieldroast hot dog with Vegenaise and Valenta hot sauce slaw.

Fried rice with Fieldroast hot dog.

Mexican Rice

Notes: I cooked in the rice cooker after browning rice. I also added corn.

Ingredients
Vegetable oil
1 cup long grain rice
1 tsp minced garlic
1/2 tsp cumin
1/2 cup tomato sauce
1 cup vegetable broth
Chopped fresh cilantro

Directions
In a big sauce pan brown rice in oil.
Add garlic and cumin and stir.
Add tomato sauce and broth.
Bring the mix to a boil then turn heat to low and simmer till all liquid is absorbed.
Stir in cilantro.
