1/2 block of extra firm tofu (7oz)
1/2 cup aquafaba
1 Tbsp nutritional yeast
1 tsp turmeric
Salt & pepper to taste
Blend all the ingredients except for s&p.
In a skillet with a little oil, cook covered over medium heat for a of couple minutes.
Remove lid and scramble til firm (approx 10 minutes).
Vegan breakfast burrito with scrambled tofu, sausage and fried potatoes.

here. I think it’s pretty good.
Vegan sausage with grilled onion and jalapeno on whole wheat bun.
The next day I made more sausage in the form of a patty for breakfast adding some ground sage to the mix.
Breakfast vegan sausage along with tofu scramble and fried potatoes.
Vegan pulled BBQ Jackfruit Sandwich topped with home-made bbq sauce and slaw. Served with homemade potato salad.
I didn’t really follow any recipes for any of this.
For the jackfruit I cooked it along with onion in a skillet I added black pepper, garlic powder, paprika, cayenne pepper, tamari and maple syrup.
Soba noodles and fresh veggies tossed with tamari, Sesame oil and red pepper flakes. Was just so-so.
Cubed potatoes, extra firm tofu and chopped onion cooked in a skillet with nutritional yeast, a dash of turmeric, garlic powder and onion powder, salt and pepper. Baby spinach tossed in at the end.
Cubed and cooked the squash in a little coconut oil along with thyme, oregano, garlic, onion powder and black pepper. Mixed it with whole wheat spaghetti noodles, baby spinach, vinegar & oil and red pepper flakes.
We both thought it was pretty good.

Oven fried falafels topped with Sriracha Vegenaise and a salad.
We both thought these were good. Nova ate hers as a sandwich. Easy to make. Requires the use of a food processor which I tend to shy away from I suppose because it’s just more clean up.
I marinated the tofu in teriyaki sauce and then pan fried. Served on a bun along with sliced pineapple (which I browned in the pan) and spinach.
It wasn’t all that great. Mostly I’m just not a fan of sweet in my meals.
1 package Beyond Meat Beyond Beef crumbles
2 cups uncooked brown rice
1 small onion chopped
1 bell pepper chopped (I used half a green and half of a red)
3-4 celery stalks chopped
1 jalapeno sliced
2 cloves minced garlic
Cook rice however you normally would
Brown the meat crumbles
Add veggies and continue cooking until veggies soften up
Add in cooked rice
Salt & Pepper to taste
